Ingredients: – 4 large bell peppers (any color) – 1 lb ground turkey or beef – 2 cups cauliflower rice (store-bought or homemade) – 1/2 cup shredded cheddar cheese (or your favorite cheese) – 1/4 cup onion, finely chopped

– 1 clove garlic, minced – 1 tsp dried oregano – 1 tsp ground cumin – Salt and pepper to taste – Olive oil for sautéing

Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set aside. 

Cook the Filling: Heat olive oil in a skillet over medium heat. Add the chopped onions and garlic, sautéing for 2-3 minutes until fragrant. Add the ground turkey or beef and cook, breaking it apart with a spoon, until browned and cooked through. 

Add the Cauliflower Rice: Stir in the cauliflower rice, oregano, cumin, salt, and pepper. Cook for another 5-7 minutes, allowing the cauliflower rice to soften and absorb the flavors. 

Stuff the Peppers: Preheat your oven to 375°F (190°C). Stuff each bell pepper with the turkey or beef mixture, packing it in tightly. Top with Cheese: Sprinkle the shredded cheese on top of each stuffed pepper.

Bake: Place the stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes, removing the foil for the last 5 minutes to allow the cheese to melt and turn golden brown. Serve and Enjoy: Once done, let the peppers cool for a few minutes, then serve!
