A meal of pre-cooked chicken paired with roasted vegetables and quinoa is a quick, balanced, and nutritious option that is perfect for busy days when you need a satisfying meal with minimal effort. 

This combination of lean protein, fiber-rich vegetables, and whole grains offers a well-rounded dish that will keep you feeling full and energized. It’s a great choice for meal prepping, as the components can be easily stored and assembled when needed. 

To start, preheat your oven to 400°F (200°C) and prepare your vegetables. Choose a mix of hearty vegetables like sweet potatoes, bell peppers, zucchini, and Brussels sprouts. Cut them into uniform pieces so they cook evenly. 

Drizzle the vegetables with olive oil, and season with salt, pepper, and your choice of herbs or spices, such as rosemary, thyme, garlic powder, or smoked paprika. Roast the vegetables on a baking sheet for about 20–25 minutes, or until they are tender and slightly caramelized .

While the vegetables are roasting, prepare the quinoa. Rinse the quinoa under cold water to remove any bitterness. In a pot, combine the quinoa with water or vegetable broth for extra flavor, and bring it to a boil. 

Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is tender and the liquid is absorbed. Fluff the quinoa with a fork once it’s done. 

For the pre-cooked chicken, you can use leftover roasted chicken, rotisserie chicken, or simply grill or sauté chicken breasts ahead of time. Slice the chicken into strips or chunks. If desired, you can quickly reheat the chicken in a pan with a touch of olive oil to give it a crispy exterior. 

To assemble the meal, start with a base of quinoa on each plate, followed by a generous serving of roasted vegetables and sliced chicken. You can drizzle a little olive oil or lemon juice on top for added flavor and freshness.
