Grilled Chicken & Avocado Salad: A Light, Refreshing Meal for Any Day.

When you're craving something light but filling, a refreshing salad with grilled chicken, cucumber, and avocado is the perfect choice.  

This healthy combination brings together lean protein, creamy avocado, and crisp cucumber, topped with a tangy vinaigrette to tie it all together. It’s not just a salad—it’s a celebration of fresh, nutritious ingredients! 

Ingredients: – 1 chicken breast (grilled and sliced) – 1 cucumber, thinly sliced – 1 ripe avocado, sliced – 2 cups mixed greens (such as spinach, arugula, or lettuce) – 1/4 red onion, thinly sliced (optional) – 1 tbsp olive oil (for grilling chicken)

For the Vinaigrette: – 2 tbsp olive oil – 1 tbsp balsamic vinegar (or lemon juice for a zesty twist) – 1 tsp Dijon mustard – 1 tsp honey (optional, for a touch of sweetness) – Salt and pepper to taste

Grill the Chicken: Season the chicken breast with salt, pepper, and a drizzle of olive oil. Grill over medium heat for 6-7 minutes per side, or until fully cooked and juices run clear. Once grilled, slice the chicken into thin strips. 

Prepare the Vegetables: While the chicken is grilling, slice the cucumber, avocado, and red onion (if using). Set aside. Make the Vinaigrette: In a small bowl, whisk together the olive oil, balsamic vinegar (or lemon juice), Dijon mustard, honey (if using), salt, and pepper until well combined.

Assemble the Salad: In a large bowl or on a plate, layer the mixed greens, cucumber slices, avocado slices, and red onion. Top with the grilled chicken. Drizzle the Dressing: Pour the vinaigrette over the salad and toss gently to coat.
