Ingredients: – 1/2 cup pumpkin puree (fresh or canned) – 1 cup whole wheat flour (or oat flour for a gluten-free option) – 2 large egg – 1/4 cup unsweetened almond milk (or any milk of your choice) – 1 tsp baking powder

– 1/2 tsp cinnamon – 1/4 tsp nutmeg – 1/4 tsp ginger – A pinch of salt – 1 tsp vanilla extract – 1 tbsp maple syrup (optional, for sweetness) – Cooking spray or coconut oil for cooking – Optional toppings: low-fat Greek yogurt, extra cinnamon, or fresh fruit

In a medium bowl, whisk together the pumpkin puree, eggs, almond milk, and vanilla extract. The pumpkin puree adds moisture and a lovely fall flavor, while the eggs provide structure.
