Ingredients: 4 large egg 1 tablespoon of soy sauce 1 teaspoon of sesame oil 1 tablespoon of finely chopped vegetables (carrot, spinach, or onions) Salt and pepper to taste 1 tablespoon of oil for frying

Prepare the Egg Mixture: Crack the eggs into a bowl, add soy sauce, sesame oil, and a pinch of salt and pepper. Whisk the mixture until it’s smooth and fully combined.

Cook the Vegetables: In a small pan, sauté your choice of vegetables (carrot, spinach, or onions) until they soften. Set aside to cool.

Cook the Egg Rolls: Heat a non-stick pan over medium heat and add a little oil. Pour a thin layer of the egg mixture into the pan, swirling it around to cover the surface. Let it cook until it starts to set, then add some cooked vegetables on top.

Roll and Repeat: Once the egg is cooked, gently roll it up from one side. Pour more egg mixture into the pan and repeat the process until all the mixture is used.

Serve: Slice the rolls into bite-sized pieces and serve with a dipping sauce.
