2 cups cooked, shredded chicken1 bay leaf1 teaspoon dried thymeSalt and pepper to tasteFresh parsley for garnish1 cup egg noodles or rice (optional)
Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and cook until softened, about 5-7 minutes.
Add Garlic & Seasonings: Stir in garlic, bay leaf, and thyme, and cook for another minute.Add Broth & Chicken: Pour in the chicken broth and bring to a boil. Once boiling, reduce heat and add the shredded chicken. Let it simmer for about 10-15 minutes.
Cook Noodles or Rice: If using, add noodles or rice and cook according to package instructions.Season: Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
