Classic Chicken Pot Pie: A Comfort Dish That Freezes Perfectly.

Chicken pot pie is the ultimate comfort food, featuring tender chicken, vegetables, and a creamy sauce, all encased in a flaky, golden crust.

This classic dish not only satisfies cravings for something warm and hearty but also makes for an excellent make-ahead meal, as it freezes beautifully and can be reheated with ease.

The filling of a chicken pot pie typically includes cooked, shredded chicken, a mix of vegetables like carrots, peas, and celery, and a creamy sauce made from a combination of butter, flour, and chicken broth.

A little bit of cream or milk is added to give the sauce its rich, velvety texture. To enhance the flavor, seasonings like thyme, garlic powder, onion powder, and a pinch of salt and pepper round out the dish.

The crust is traditionally made from a buttery pie dough, either homemade or store-bought, that bakes up flaky and golden.

Start by cooking the chicken (either by boiling, roasting, or using leftovers), then shred it into bite-sized pieces. In a separate pan, sauté the vegetables until softened. Make the creamy sauce by melting butter, whisking in flour, and slowly adding chicken broth and milk until it thickens.

Combine the shredded chicken, vegetables, and sauce, and mix until everything is well-coated. Once the filling is ready, transfer it into a pie dish.

Roll out the pie crust and drape it over the filling, trimming any excess and crimping the edges to seal. Brush the top with an egg wash for a golden finish and bake until the crust is flaky and golden brown.
