Ingredients: – 1 ripe avocado, mashed – 1 cup whole wheat flour (or almond flour for a gluten-free option) – 2 large egg – 1/2 cup unsweetened almond milk (or any milk of your choice)

– 1 tsp vanilla extract – 1 tsp baking powder – A pinch of salt – 1 tbsp honey or maple syrup (optional for sweetness) – Coconut oil or butter for cooking – Optional toppings: fresh fruit, nuts, or a drizzle of honey

Start by mashing the ripe avocado in a bowl until smooth. The avocado will serve as the base for the pancake batter, providing creaminess and moisture without the need for butter or heavy cream.
