Anti-Inflammatory Ingredient to Add to Your Sandwiches

This slow-cooked pulled pork served on soft buns with a side of crunchy coleslaw is the ultimate comfort food, ideal for a midweek treat or casual gathering. 

The slow-cooking process infuses the pork with deep, rich flavors, making it tender and easy to shred. Paired with creamy coleslaw and served in soft buns, this dish is a delightful combination of textures and tastes. 

To begin, season a pork shoulder with a dry rub of your choice—common ingredients include brown sugar, paprika, garlic powder, onion powder, salt, and pepper. This dry rub gives the pork a sweet and smoky flavor.  

After massaging the seasoning into the meat, place it in a slow cooker. Pour in a small amount of apple cider vinegar or your favorite barbecue sauce, then cover and cook on low for 6–8 hours, or until the pork is tender and easily pulls apart with a fork. 

Once the pork is done, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the pot and stir it in with the cooking juices for extra flavor and moisture. For an added kick, you can mix in more barbecue sauce or a dash of hot sauce. 

While the pork is cooking, prepare the coleslaw. In a large bowl, combine shredded cabbage, carrots, and thinly sliced red onion. In a separate bowl, mix mayonnaise, apple cider vinegar, a little sugar, and salt to taste. 

Toss the vegetables in the dressing until well coated. You can adjust the seasoning with extra vinegar or sugar, depending on whether you prefer a tangy or sweet slaw.
