This dish is perfect for anyone looking for a satisfying, wholesome meal that’s easy to prepare and full of vibrant, zesty flavors. The combination of tender chicken, fluffy rice, and sautéed vegetables creates a delicious base that can be customized with your favorite toppings. 

To start, season boneless, skinless chicken breasts or thighs with a blend of spices such as chili powder, cumin, garlic powder, onion powder, and a squeeze of lime juice. You can also add a pinch of paprika or cayenne pepper if you prefer a little extra heat.  

While the chicken is marinating, cook the rice according to the package instructions, using either white, brown, or even cauliflower rice for a lighter option. The rice serves as the base of the bowl, offering a hearty and neutral backdrop for the seasoned chicken and veggies.
